Avocado toast has become a quintessential modern classic, beloved for its simplicity, versatility, and nutritional value. Making it with whole wheat bread not only adds a lovely nutty flavor but also boosts the fiber content, making for a healthier option. Here's a recipe for a delicious and nutritious avocado toast on whole wheat bread, perfect for breakfast or a light meal.

Ingredients:


  • 2 slices whole wheat bread
  • 1 ripe avocado
  • Juice of 1/2 a lemon (adjust to taste)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Extra virgin olive oil, for drizzling
  • Red pepper flakes or dash hot sauce, for garnish (optional)

 

Optional Toppings

  • Sliced tomatoes
  • Sliced radishes
  • Sprouts
  • Arugula or baby spinach
  • Hard-boiled, poached or soft-boiled egg
  • Smoked salmon
  • Feta or goat cheese
  • Toasted sesame seeds or hemp seeds for a crunchy texture

 
Instructions:


  1. Toast the Bread: Toast the whole wheat bread slices to your preferred level of crispiness using a toaster or oven.
  2. Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Add lemon juice, salt, and pepper to the bowl. Use a fork to mash the avocado and mix the ingredients together. The amount of lemon juice, salt, and pepper can be adjusted according to your taste. The lemon juice not only adds flavor but also helps to keep the avocado from browning.
  3. Assemble the Avocado Toast: Spread the mashed avocado evenly over the toasted bread slices. Use the back of a spoon or a knife to create a smooth or rustic finish, depending on your preference.
  4. Add Toppings: This is where you can get creative and tailor your avocado toast to your liking. Add any of the optional toppings mentioned above or come up with your own combination. Drizzle a little extra virgin olive oil over the top for a rich finish. Sprinkle with red pepper flakes for a bit of heat, if desired. Serve immediately, accompanied by additional lemon wedges on the side if you like more tanginess.

  • Choosing Avocados:  For the best texture, use avocados that are ripe but still slightly firm. They should yield to gentle pressure without feeling mushy.
