Lemony Charred Broccoli and White Bean Salad

This Lemony Charred Broccoli and White Bean Salad is not only flavorful but also packed with fiber, protein and vitamins. This salad can be served warm, at room temperature or chilled, and it’s perfect as a refreshing side to grilled meats or fish.

Ingredients:


  • 2 large heads of broccoli, cut into small florets
  • 5 tablespoons extra virgin olive oil, divided
  • Kosher Salt and ground black pepper, to taste
  • Juice of 1 large lemon (about 3-4 tablespoons)
  • 1 teaspoon Dijon mustard
  • 1 tablespoons shallots, minced
  • 1/2 teaspoon honey or coconut sugar
  • 1 can (15 oz) white beans (such as cannellini or Great Northern), drained and rinsed
  • 1/4 cup toasted pine nuts or slivered almonds
  • 1/2 cup shaved Parmesan cheese 
  • 1/2 lemon, zested 

 

Instructions:


  1. Preheat the broiler on high heat and adjust the rack to the top third of the oven. On a large baking sheet, toss to coat the broccoli florets with 2 tablespoons olive oil and season with salt and pepper. Broil, tossing occasionally, until the broccoli edges are crispy and slightly charred, about 8-10 minutes.
  2. To make vinaigrette, in a large mixing bowl, whisk the lemon juice, Dijon mustard, shallots, honey, 3 tablespoons olive oil, salt and pepper until well combined. Add the charred broccoli and white beans and toss to coat in the vinaigrette. Season to taste with salt and pepper, then stir in the toasted nuts and shaved Parmesan. Garnish with lemon zest for an extra pop of lemony flavor.
